After looking through our Freezer Inventory, I came to the conclusion that we may have enough meat at least for a couple of months. So perhaps this may become a regular feature here, ha ha! Anyway, I sat down with my inventory, a fresh piece of paper and naturally my tea and a homemade brownie.
What I began to realize is that when you sit down to plan like this, it sort of forces you, or me at least, to begin to think outside the box. When you have to actually come up with side dishes, you realize how much you actually go to the normal 3 – potatoes, pasta, and rice. That’s another challenge – coming up with some new and different side dishes. This is especially important for me because I am trying to stay away from those because of losing weight.
The other thing I try to do when planning meals is to think about presentation. Your plate needs to be balanced with colors. When there is a lot of color, and a variety of shades, your plate is more appealing. Which is huge when trying to feed some picky eaters. So, for instance I try to stay away from a chicken and white rice combo because it is bland. Instead I would put a wild rice with it if rice was to be the side. When thinking about Tuesday’s meal, I almost put carrots down for the side veggie, but pulled back because with the sweet potatoes it would be too much orange. As you can see, I opted for broccoli instead.
One thing I want to note is that I don’t really follow too many recipes – I tend to make my own way with food unless I find a really great recipe. I’m trying to get better about writing down what I do so I can share the recipes, plus it helps me be able to remember important details in the instance of canning. The recipe below for Christy Jordan’s Crockpot Chicken & Wild Rice is a family favorite.
