I’m going to let you in on a little secret. These are the very best cookies, evah. I mean, ever ever ever ever. And, you can’t eat just one. Nope. You have to eat like 9 of them. And, don’t get suckered into a silly “jam cookie”. You have to make these, they are the real deal, man.
Ok, here we go.
- 1/2 lb. sweet butter
- 1 cup sugar
- 3 eggs separated, plus one whole egg
- 2 Cups flour
- Nuts, ground (optional)
- Jelly (you won’t need much)
Cream butter, add sugar and egg yolks (plus the one whole egg) and beat well. Add flour, blend well. Refrigerate for an hour. Meanwhile, beat the egg whites, and in a separate dish mix your nuts and sugar. After an hour, grab your cookie dough. Using a cookie dough scoop, make into balls. Roll each into the egg white, then into the nut sugar mixture. Place on greased cookie sheet about 3 inches apart. Make a hole in the center with your thumb and add whatever jelly you choose. Bake for 20 minutes in 350 oven.
When these babies come out of the oven, put them on a cooking rack right away to cool. Do NOT eat one right away – the jam will scald you.
